For Spatial Indexes there is a separate set of docs:

I'm afraid there is not, for the rest (projections). There has been (in Doxygen) but that is long ago, and not updated recently.

I'm hoping to define double precision cartesian coordinate systems in meters with the origin at arbitrary WGS84 coordinates for conversion between that cartesian coordinate system and WGS84.

That sounds interesting, in the past the projections has been documented, I will look if I can revisit this on short term.
