There isn't one, at leas not the Latinish one you're looking for.
AFAIK there's no -ex postfix in Latin, at least for nouns, so there
aren't any declination rules for it. You cou'ld bastardize the
rules for -ix (mutex -> muteces) but that's weird. Muti is certainly
wrong (the singular should have been be mutum -- short for "mutual, um,
exclusion?"), so you're stuck with mutexes :-)
